INGREDIENTS
For the Red Lentil Wrap (Dosa):
- 1 cup red lentils (soaked for 2 hours)
- 2 green chillies
- ½ tsp jeera powder
- ½ tsp ajwain
- 2 pinches hing
- Salt to taste
- 3 tbsp chopped coriander leaves
- ¼ cup water (to grind)
For the Filling:
- 1 zucchini (spiralized or cut into fine strips)
- 5 tbsp boiled sweet corn
- 10 cherry tomatoes (chopped)
- 1 large onion (thinly sliced)
- 1 tbsp butter
- 1 tsp black pepper
- 1 tsp red chilli flakes
- 1 tsp salt
- 150 gms glossy paneer Butter spread

PREPARATION STEPS
1. Prepare the Wraps:
• Soak red lentils for 2 hours and drain.
• Transfer to a mixer jar with green chillies, jeera powder, ajwain, hing, salt, coriander, and water.
• Grind to a smooth batter.
• Heat a frying pan and spread the batter like dosa.
• Cook both sides until golden and set aside.
2. Prepare the Filling:
• Sprinkle salt over zucchini strips and set aside for 20 minutes.
• Squeeze out excess water.
• Heat butter in a pan. Add zucchini, sweet corn, cherry tomatoes, and sliced onions.
• Sauté for 2 minutes.
• Add pepper, red chilli flakes, and salt. Mix well and turn off heat.
• Add glossy paneer Butter spread and mix thoroughly with the vegetables.
3. Assemble the Wraps:
• Take one red lentil dosa.
• Spoon the vegetable-paneer filling onto it.
• Roll tightly like a wrap and serve warm
