INGREDIENTS
- 150 grams fresh paneer
- 4 tbsp milk
- 2 tbsp butter
- 3 grams ENO (fruit salt)
- 1 tbsp water
- 1 tsp dry parsley
- 1 tsp red chilli flakes


PREPARATION STEPS
- Add fresh paneer, milk, and butter to a mixer jar. Blend into a smooth paste.
- In a small bowl, mix 3 grams ENO with 1 tbsp water. Once the bubbles subside, add to the paneer mixture.
- Blend again until fully combined into a fine paste.
- Use a double boiler method: Pour the mixture into a bowl placed over simmering water and stir constantly until it turns glossy, stretchy, and cooked.
- Transfer to a bowl. Add parsley and chilli flakes. Mix well.
- Refrigerate for 5 hours.
- Use as a dipping sauce, sandwich spread, or roti filling.
