INGREDIENTS

  • 2 medium onions, chopped
  • 12 garlic cloves, peeled
  • 1 tbsp red chili powder
  • Salt – to taste
  • 2 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds (jeera)
  • A few curry leaves
  • A pinch of hing (asafoetida)
  • 2 tomatoes, chopped
  • 2 bunches of thotakura (amaranth greens), washed and chopped
  • 3 tbsp sesame powder (roasted and ground sesame seeds)

PREPARATION STEPS

  1. In a mixer jar, add chopped onions, red chili powder, garlic cloves, and salt.
    Grind into a coarse paste and keep aside.
  2. Heat 2 tablespoons of oil in a pan.
    Add mustard seeds and cumin seeds. Let them crackle for a minute.
  3. Add curry leaves and hing, sauté briefly until aromatic.
  4. Add the prepared onion-garlic paste and chopped tomatoes.
    Cook until the tomatoes are soft and the mixture is well blended.
  5. Now add chopped thotakura (amaranth greens).
    Mix well and cook until the water evaporates and the greens are fully cooked.
  6. Add 3 tablespoons of sesame powder and mix thoroughly.
  7. Serve hot with steamed rice or roti.
