Step-by-Step Recipe : Thotakura Sesame Rush
INGREDIENTS
- 2 medium onions, chopped
- 12 garlic cloves, peeled
- 1 tbsp red chili powder
- Salt – to taste
- 2 tbsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds (jeera)
- A few curry leaves
- A pinch of hing (asafoetida)
- 2 tomatoes, chopped
- 2 bunches of thotakura (amaranth greens), washed and chopped
- 3 tbsp sesame powder (roasted and ground sesame seeds)


PREPARATION STEPS

In a mixer jar, add chopped onions, red chili powder, garlic cloves, and salt.
Grind into a coarse paste and keep aside. -
Heat 2 tablespoons of oil in a pan.
Add mustard seeds and cumin seeds. Let them crackle for a minute. - Add curry leaves and hing, sauté briefly until aromatic.

Add the prepared onion-garlic paste and chopped tomatoes.
Cook until the tomatoes are soft and the mixture is well blended. -
Now add chopped thotakura (amaranth greens).
Mix well and cook until the water evaporates and the greens are fully cooked. - Add 3 tablespoons of sesame powder and mix thoroughly.
- Serve hot with steamed rice or roti.
