Always knead the dough just before making the rotis, as jowar flour tends to dry out quickly. Use warm water for softer rotis and add vegetables with high moisture like bottle gourd or cabbage to help bind the dough better. Grease your palms to flatten the dough easily or use a banana leaf or butter paper. Cook on medium heat and press gently with a spatula for even cooking and perfect texture.

INGREDIENTS

 - 2 Cups Jowar Flour

- 1/2 cup chopped red capsicum

- 1/2 cup grated carrot

- 1/2 cup chopped coriander

- 1 cup grated bottle gourd

- 2 inches chopped ginger

- 5 cloves chopped garlic

- 4 green chilies, chopped

- 2 tbsp sesame seeds

- 1 tbsp carom seeds (ajwain)

- 1/2 tbsp chili flakes

- 1/2 tbsp black pepper powder

- 1 tbsp ghee

- Salt to taste

PREPARATION STEPS

​ 1. **Prepare the Dough:**

- In a large bowl, combine jowar flour, chopped red capsicum, grated carrot, chopped coriander, grated bottle gourd, chopped ginger, chopped garlic, green chilies, sesame seeds, carom seeds, chili flakes, black pepper powder, ghee, and salt.

- Mix well for about 10 minutes until the mixture turns into a dough. If the dough is too dry, add a little water as needed.

- Cover the dough with a wet cloth and let it rest for 30 minutes.


2. **Cook the Roti:**

- After 30 minutes, take a small ball of dough and spread it into a round shape like a roti on a wet cloth using your hands.

- Transfer the roti to a preheated pan and cook both sides, adding a little oil, until done and golden brown.


3. **Serve:**

- Serve hot with butter for extra flavor.
