Because Even Dal Needs a Little Drama
Use soft-cooked toor dal for a smoother texture. Steam the drumsticks just until tender—they should be soft but not falling apart. Add jaggery for a subtle sweet balance that enhances the spice. For deeper flavor, use ghee in the final tadka. You can prepare the dal base in advance and add the fresh tadka just before serving. This recipe is easily customizable—add onions or curry powder for variation.

INGREDIENTS
For the Dal:
- 3 tbsp oil
- ½ tsp mustard seeds
- ½ tsp chopped garlic
- 2 pinches hing (asafoetida)
- 1 green chilli, finely chopped
- ½ tbsp red chilli powder
- ½ tsp coriander powder
- 1 tomato, finely chopped
- 1 cup cooked toor dal (arhar dal)
- 15 medium-sized pieces of steamed drumstick
- ½ tsp jaggery powder
- Salt to taste
For the Final Tadka (Tempering):
- ½ tsp red chilli powder
- 1–2 dry red chillies
- ½ tbsp finely chopped garlic
- 2 pinches hing (asafoetida)
- 1 tsp oil or ghee (optional, for added aroma)
- A handful of curry leaves
Garnish:
- Fresh coriander leaves, chopped


PREPARATION STEPS
1. Base Tempering & Masala:
- Heat 3 tablespoons of oil in a pan.
- Add ½ tsp mustard seeds and allow them to splutter.
- Add ½ tsp chopped garlic, 2 pinches of hing, and chopped green chilli.
- Sauté on medium flame until garlic turns light golden.
2. Spice & Tomato Masala:
- Add ½ tbsp red chilli powder and ½ tsp coriander powder.
- Mix and sauté for 30 seconds without burning the spices.
- Add chopped tomato and cook until soft and mushy.
3. Add Drumsticks & Dal:
- Add steamed drumstick pieces, mix gently, and cook for 3 minutes.
- Pour in the cooked toor dal.
- Mix well and simmer on low to medium flame for 5 minutes.
4. Sweet Touch:
- Stir in ½ tsp jaggery powder.
- Adjust salt as per taste.
5. Final Tadka (Flavor Boost):
- In a small pan, heat 1 tsp oil or ghee.
- Add ½ tbsp chopped garlic, hing, dry red chillies, and red chilli powder.
- Let the garlic turn golden and chillies crisp. Turn off the flame.
6. Assemble & Garnish:
- Pour the hot tadka over the dal.
- Garnish with chopped coriander leaves.
- Serve hot with rice or chapati.
