Step-by-Step Recipe : Snake Gourd Bites
INGREDIENTS
- 2 tbsp sesame seeds, roasted and powdered
- 2 tbsp besan (gram flour), roasted
- 2 tbsp dry coconut powder
- 1/2 tbsp cumin seeds
- 1 green chili, chopped
- 1/2 tsp ginger, grated
- 1 tbsp coriander leaves, chopped
- 1/2 tsp amchur (dry mango) powder
- 1/4 cup onion, chopped
- Chopped snake gourd seeds
- 1 tsp red chili powder
- 1 tbsp oil
- Salt to taste
- 1 medium-sized snake gourd
- 1 tbsp oil (for cooking)
- 30 gms cheese, grated
- 1/2 tsp red chili flakes

PREPARATION STEPS
1. **Prepare the Snake Gourd:**
- Cut the snake gourd into 2-inch pieces and hollow them out.
- Boil the pieces in salted water for 3-4 minutes, then cool them in cold water. Drain and pat dry.
2. **Prepare the Stuffing:**
- In a bowl, mix the sesame powder, besan, dry coconut powder, cumin seeds, chopped green chili, grated ginger, chopped coriander leaves, amchur powder, chopped onion, chopped snake gourd seeds, red chili powder, oil, and salt to taste.
3. **Stuff the Snake Gourd:**
- Stuff the snake gourd pieces with the prepared mixture.
4. **Cook the Stuffed Snake Gourd:**
- Heat 1 tbsp oil in a pan.
- Cook the stuffed snake gourd pieces until they are done.
5. **Serve:**
- Cut the stuffed pieces vertically.
- Top with grated cheese and red chili flakes.
- Serve warm.
